Our Story

Le Bledo opened its doors in 2017 with owner Thai Huynh at the helm. He envisioned a Vietnamese restaurant that made time-honored flavors more accessible to the surrounding community. To achieve this, Thai fashioned Le Bledo’s premises after West Coast-style eateries, allowing customers to enjoy a fast-casual dining experience or just hang out over coffee and snacks. Then, he expanded Le Bledo’s catering arm and started its food truck services in 2024.

No matter what kind of dining experience you prefer, you can always expect authentic Bánh Mì sandwiches, soups, and snacks (not to mention Vietnamese coffee!) from our kitchen. The culinary staff delivers diverse flavors, including Pho, Bun Bo Hue (spicy beef and pork), Bun Rieu/Bun Oc (crab and pork bone or snail meatballs), Mi Quang (shrimp and pork), Bo Kho (beef stew) and Bun Mang Vit (duck and bamboo). We’ve even created a selection of Chay (vegetarian) options: a veggie sandwich, vermicelli noodle bowls, and a few soups made from all vegetables.

Owner and Head Chef

Meet Thai Huynh

Thai Huynh grew up in Fairfax County and attended local schools, graduating from George Mason University with a degree in Systems Engineering. After a successful career in IT management, he embraced a new challenge in 2016 by taking ownership of Le Bledo Eatery, a local bakery specializing in wedding and birthday cakes.

The following year, Thai relocated Le Bledo to a new building in Springfield and reopened. Since then, he has transformed Le Bledo into a thriving eatery offering authentic Vietnamese cuisine, catering services, and, as of 2024, a food truck. Thai’s culinary knowledge, passed down from his mother, reflects the rich traditions of his family, who immigrated to the US from Vietnam in 1993.

Thai is passionate about supporting local businesses and giving back to his community,
always looking for ways to contribute to the local economy and foster meaningful connections. Under Thai’s leadership, Le Bledo has become a community favorite, known for its flavorful meals, welcoming atmosphere, and commitment to personalized service.

Outside of work, Thai values learning and sharing knowledge to help others develop their skills. He also prioritizes time with his growing family, maintaining a healthy lifestyle, and balancing the demands of his business, personal life, and well-being.

Been coming here for a long time and everything is always so consistent. Staff is friendly and helpful to menu/food questions. The banh mi bread is perfect. Don't forget to try their Vietnamese iced coffee or Thai Iced Tea! Both are excellent!
